Turnip Salad with Yogurt, Herbs and Poppy Seeds
Below is a delicious and nutritious recipe inspired by Josh McFadden from his book, Six Seasons. It combines salad turnips - also know as Tokyo or Hakurei turnips. These aren't your typical turnips which you'd have to cook. These are small to medium sized turnips that have very little bite to them, and can be eaten raw in salad along with their green tops. The recipe provided combines the turnips and their greens, whole grass fed yogurt, poppy seeds, fresh herbs and lemon. These combinations enhance the ingredients' flavours and makes the vitamins, minerals and antioxidants more absorbable in your body.
