Nothing beats a hot bowl of Chili in the winter. I personally love chili because it consist of many of my favorite delicious, nutritious and detoxifying foods and spices like beans, grass fed beef, tomatoes, garlic, onions, cooked celery and coriander. You’ll probably be having a roast or turkey on during this time of year, but on those in between days - I highly recommend making my chili recipe. Enjoy it with a couple of slices of freshly baked sourdough bread from the local bakery.
Heat large sauce pan at medium heat and then add olive oil. Add the garlic to the pan and sauté for 2 minutes. Add the onion next and sauté for another 2-3 minutes.
Stir in the chili powder, paprika, coriander, cumin, oregano and black pepper and mix well with garlic and onions. Add more olive oil if needed as the dried spices might dry up the mixture.
Mix in the grass fed ground beef as evenly as possible and keep mixing and breaking it up. Once the meat is looking medium rare, toss in the peppers, carrots, celery and fire roasted tomatoes and gently stir for 2-3 minutes
Stir in the beans, followed by the bay leaves, and finally the broth or water.
Bring to a boil then lower heat to simmer for an hour.
Wit a few minutes left to cook add sea salt and cracked black pepper to taste. Add 1/4 tsp of nutmeg as well it'll bring out all the flavors.
Seve in bowls and fresh chopped cilantro and squeeze lime over for some vitamin C rich zest!
